Peppery roast beef tenderloin from Texas Beef Council

Lauren Tedford of the Texas Beef Council shared an easy way to prepare the perfect beef roast!

Lauren says choose whatever beef roast you prefer, but she used a beef tenderloin for this recipe. Eye of round would be a more economical option.

1. Coat entire roast with rub of choice. Lauren used 1 part black pepper and one part Greek seasoning.

2. Roast in shallow pan (2") at 350 for approx. 20 minutes per pound until roast reaches internal temperature of 135. Rack is optional; do not add liquid.

3. Remove from oven, and tent with foil. Allow to sit for 15-20 minutes before carving. Temperature should rise to 145.
