Fit City Vegetables and Chicken


Spinach, fresh, 2 ozs

Marinated Mixed Vegetables, 5 ozs

Grilled Chicken Breast, 5 ozs

Marinated Mixed Vegetable recipe

          1/4 cup extra virgin olive oil

          2 teaspoons, chopped garlic

          1/2 teaspoon, coarse ground pepper

          1/2 teaspoon, kosher salt

          1/2 teaspoon, season salt

          1/2 quart sliced green bell pepper

          1/2 quart sliced zucchinni

          1/2 quart sliced yellow squash

          2 tomatoes, cut into six wedges

          1/2 quart cauliflower florets

Take all ingredients, toss together, put in sealed container, marinate for 4 hours minimum

Take spinach and place in large pasta bowl

Place marinated mixed vegetables on top of spinach (5 ozs only)

Place chilled, grilled chicken breast on top of all

Place in microwave on high for 1 minute, 45 seconds
