Mama Steph's 10-minute Southwestern chicken and rice
1 TBS olive oil
1 1/2 cups diced zucchini
1/2 cup diced green bell pepper
1 can black beans, drained and rinsed
1 can diced tomatoes (do not drain)
3/4 cup water
1 cup instant white rice, uncooked
1/2 cup shredded cheddar-jack cheese
1 bag pre-cooked fajita chicken pieces
1. Heat oil in skilled over medium heat. Add zucchini and bell pepper; sautee for 3 minutes, stirring occasionally.
2. Add beans, undrained tomatoes, and water.
3. Increase heat and bring to a boil, stirring.
4. Add rice and stir well. Sprinkle chicken over the top of rice. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese. Serve with tortilla chips and sour cream, if desired.
