Blueberry cobbler with crumb topping

Blueberry Cobbler

1 lb Blueberries, washed

¼ C Water

2 Tbl Cornstarch

2 Tbl Granulated Sugar

¾ C Crumb Topping

1 pt Jeni's Vanilla Ice Cream


For the cobbler: Combine the first four ingredients and toss together in a mixing bowl. Place in individual cobbler dishes or a single large dish. Top with the crumb topping and bake in a 350 degree oven for 15 minutes or until the blueberries just begin to burst open. Top with ice cream and serve.

Crumb Topping

1/2 C AP Flour

½ C Oatmeal

2 tsp Brown Sugar

¼ tsp Cinnamon

4 oz Salted Butter, chilled, diced


For the topping: Combine the first 4 ingredients. Add in the butter in with your fingers forming a coarse mixture similar to cornmeal. (Just like making biscuits) Do not let the butter melt. Reserve in your refrigerator until needed.
