Organic Orange Chicken Tacos

1 lb Chicken Thighs, Boneless and Skinless

1 Ea Fresh Orange, cut in 1/2

10 Ea Fresh Cilantro Sprigs, chopped

4 Ea Roma Tomatoes, 1/4

0.5 Ea White Onion, 1/4

2 tsp Ground Coriander

1 Pint Chicken Broth

6 Ea Whole or Sprouted Grain Tortillas

1 Ea Optional: Sliced Jalapeno


Preparation Directions

To start, use a very sharp knife to dice the tomatoes and onions into ¼" pieces. Cut each chicken thigh into 6 even pieces, juice ½ of the orange and combine all of the ingredients in a sauce pot except for the ½ the orange and 5 springs of cilantro, those will added at the end of the cooking process. Bring the mixture to a boil and continue cooking until the liquid is reduced to almost dry consistency. Use a whip to shred the chicken as it cooks, about 30-40 minutes. Season with salt taste then squeeze the other ½ of the orange and add the freshly chopped remaining cilantro, stir to combine evenly and set aside for service.
