Les Ellsworth joined us on In the Kitchen today to share his restaurant's regionally famous pimiento cheese recipe. If you haven't had this pimiento cheese, you haven't really HAD pimiento cheese!
1 pound aged Wisconsin Cheddar cheese
8 oz of good mayonnaise (in the restaurant, they use a "heavy duty" mayo; available at Sams Club and other locations. It's a bit more egg-y and richer than typical mayo.)
3 1/2 TBS of jarred pimientos
3 TBS of diced green onions
3/4 teaspoon of white pepper
Grate cheese, and place all in a large mixing bowl. Mix well. Doesn't need salt, as the cheese is salty enough on its own, we find.
