It's summer. I know it's hot, but you're not going to
eat nothing but cold food. Here's a light , quick, and easy recipe for a really
good appetizer that you can enjoy with your favorite cold beverage, on the
porch or beside the pool with your friends, on a nice summer night. Besides
that, spinach is a super food! Spinach has more vitamin C than oranges, more
vitamin D than milk, and more iron than liver! Spinach is fat free and high in
fiber, while low in calories and carbs. No wonder it was POPEYE'S choice!
QUICK AND EASY SPINACH AND ARTICHOKE DIP
One small (10oz) package frozen (thawed) chopped leaf
One small (8oz) package cream cheese (room temp or use
One cup mayonnaise (8oz)
One small can quartered artichoke hearts (well drained}
One teaspoon garlic powder
One teaspoon crushed red pepper flakes
One teaspoon ground black pepper
Squeeze out as much liquid from spinach and artichoke. In a
large bowl, mix vegetables and all other ingredients. Thoroughly combine. You
can eat this cold or spoon into shallow baking dish, sprinkle with shredded
parmesan and bake at 350 until cheese melts and begins to slightly brown. Serve
with your favorite tortillas chips, pita chips, or garlic toast points.
