In a skillet take your onions and garlic and cook on medium high heat with olive oil until the onions are translucent. Add your Rotel, tomato sauce, and chicken broth, bring to a boil and then reduce heat and simmer on low for 30 minutes.
In a separate skillet take your shredded chicken and the cayenne pepper, cumin, and paprika. Cook over medium heat with olive oil until done and shred with the spatula. Add the chicken to your sauce and simmer for an additional 30 minutes. Finally add you lime juice and honey and mix thoroughly.
Severe on bib lettuce with sour cream, Pico de Gallo, shredded pepper jack cheese, and shredded lettuce.
