1 pound of shrimp
3 Roma tomatoes
French bread loaf
Shredded mozzarella cheese
Shredded parmesan cheese
Fresh basil strips
Take a large French bread loaf and cut into fourths. Then cut the pieces in half again through the center to make 8 pieces. Take your bread pieces and coat in olive oil and then sprinkle with Italian seasoning. Toast the bread pieces in a 425 degree oven for 8 minutes.
While the bread is toasting, in a skillet over medium high heat place your diced onions with 2 tablespoons of butter and one table spoon of minced garlic and cook for four minutes. After four minutes add your diced Roma tomatoes and shrimp and cook until the shrimp is done.
Take your shrimp mixture and place evenly across your bread pieces. Cover the shrimp with shredded mozzarella and parmesan cheese. Place back in the oven and cook until the cheese has melted, about 4 minutes.
Take out of the over and garnish with fresh basil.
