12 eggs

6 corn tortillas sliced into strops

½ onion

½ green bell pepper

1 can of Rotel tomatoes drained

1 small can of diced green chilies

Diced green onions

Diced cilantro

Shredded mixed cheese




Garlic salt


In a mixing bowl combine 12 eggs, 1 tsp cumin, 1 tsp, salt, 1 tsp pepper, and 1 tsp of garlic salt and mix until blended well. Set aside and in a large skillet place a couple of table spoons of vegetable oil and over medium high heat cook your onions peppers and tortilla strips. Once the peppers and onions become soft add your drained Rotel and diced green chilies. Cook for an additional minute or two. Then add your egg mixture and scramble until cooked thoroughly. Cover your cooked egg mixture with shredded cheese. Once the cheese melt take begin to serve and garnish with salsa green onions and cilantro.
