Chocolate Pancakes
2 Cup sifted flour
3 Tablespoons sugar
1/4 Cup cocoa
3 Teaspoons baking powder
2/3 Teaspoon salt
3 Eggs, beaten
1 1/2 Cups milk
1/4 Cup butter, melted
1 Teaspoon vanilla
1/3 Cup finely chopped pecans, optional
Ice Cream
Hot Fudge Sauce
Combine first 5 ingredients; sift into bowl. Add eggs and 1/2 of milk and
melted butter; mix well. Beat in remaining milk and vanilla. Stir in nuts, if
used. For each pancake pour 1/4 cup batter onto preheated lightly greased
griddle. Bake until top is full of bubbles; turn and bake second side. Serve
hot with ice cream and Hot Fudge Sauce. Yield: About 16 pancakes, 6 to 8
servings.
