Grant's Cajun Fish Tacos
Shrimp peeled and de veined with tails off
Pepper jack cheese
Pico de Gallo
First make a 1 times batch of Aioli Dressing:
Take one cup of mayonnaise
Two tablespoons of Worcestershire sauce
One table spoon of hot sauce
One table spoon of garlic powder
Mix until smooth.
Take you redfish and generously coat with blackening seasoning. In a skillet over medium high heat sear the redfish on both sides for about 4 minutes. In another skillet sauté a cup of diced onions over medium high heat. After about 4 minutes add 1 pound of shrimp and cook an additional 4 minutes. Next add ¾ cup of whipping cream and mix well. Finally add 8oz of shredded pepper jack cheese and stir until melted and blended well.
To make the taco take your flour tortilla and coat with Aioli dressing. Then place some shredded lettuce, a few strips of blacken redfish, a couple of tablespoon of the shrimp sauce, top with Pico de Gallo and enjoy!!!
