Grant's Southwest Omelet:
Pico de Gallo
Shredded Pepper Jack Cheese
In a skillet sauté your Pico de Gallo, bacon bits, and Tasso Ham with 2 tbls of butter. While this is cooking take two eggs and a slash of water and blend until smooth. Add your egg mixture to you sautéed vegetables and cook for about 4 minutes. Then place your skillet in your oven on broil to cook the top half of your omelet. This should take about 30 seconds. Take out of the oven and place pepper jack cheese across the top and place back in the oven for 30 seconds to melt the cheese.
Serve with salsa and sour cream and enjoy!
