Southwest chicken skillet by The Diner


3/4 cup of skillet potatoes

1/4 cup of diced onion

1/4 cup of diced bell pepper

1/2 cup of whole kernel corn

1/2 cup of pinto beans

1/2 cup of Pico de Gallo

4 ounces of diced chicken breast of beef fajita meat

2 eggs, any style

Your choice of bread

Cook chicken breast in a skillet, dice and setaside

Cook your skillet potatoes with your bell pepperand onion until tender.  Add corn, pinto beans and Pico de Gallo andsimmer until 160 degrees.

Place chicken on top of vegetables and then topwith two eggs cooked the way you like.
