Barbecue 3 pounds unseasoned chicken thighs.
Cool down and debone chicken. Finely chop chicken into 1/8 inch
pieces. Put in bowl and add onions and chives. Toss in the chopped
thai peppers and grated coconut. Mix all ingredients well.
Add lemon juice and spread salt and pepper evenly over chicken, mix and
taste. Add salt and peppers for heat as desired. End flavor should
be slightly tangy and spice, with a cooling touch from the coconut.
