Chicken Kelaguen from What about Kabob

What about Kabob's Chicken Kelaguen


BBQ'd chicken thighs unseasoned ( approx.  3pounds)

1 medium red onion diced

1/2 cup chives chopped

5 + thai peppers depending on desired heat

1 cup freshly grated coconut

juice from six medium lemons ( approx 1 cup )

1 tbs salt

1 tsp pepper


Barbecue 3 pounds unseasoned chicken thighs. Cool down and debone chicken.  Finely chop chicken into 1/8 inchpieces.  Put in bowl and add onions and chives.  Toss in the choppedthai peppers and grated coconut.   Mix all ingredients well. Add lemon juice and spread salt and pepper evenly over chicken, mix andtaste.  Add salt and peppers for heat as desired.  End flavor shouldbe slightly tangy and spice, with a cooling touch from the coconut.
