Grant's Southwest Omelet:
Pico de Gallo
Diced Green Peppers
Diced Tomatoes
Bacon Bits
Tasso Ham
Butter
Cumin
Eggs
Water
Shredded Pepper Jack Cheese
Salsa Sour Cream
In a skillet sauté your Pico de Gallo, Tasso, Bacon, and peppers
over medium high heat with butter and Cumin for about 6 minutes. While
this is cooking take two eggs and a slash of water and blend until
smooth. Add your egg mixture to you sautéed vegetables and cook for about
4 minutes. Then place your skillet in your oven on broil to cook the top
half of your omelet. This should take about 1 minute. Take out of
the oven and place pepper jack cheese across the top and place back in the oven
for 30 seconds to melt the cheese.
Top with salsa and sour cream.
