In The Kitchen: Twenty Minute White Bean Chili

Twenty Minute White Bean Chili


1 Cup chopped onions
1 Clove garlic -- minced
1 Tablespoon vegetable oil
1 Pound ground turkey
1 Cup chicken broth
14 1/2 Ounces stewed tomatoes
1/3 Cup grey poupon dijon mustard
1 Tablespoon chili powder
1/8 Teaspoon ground red pepper -- (or double)
15 Ounces canned cannellini beans -rinsed
8 Ounces canned corn -- drained
Tortilla chips & shredded cheddar cheese

1.Cook and stir onions and garlic in oil in a 3-quart saucepan over medium-high heat until tender. 2.Add turkey; cook until done, stirring occasionally to break up meat.
4.Stir in chicken broth, tomatoes, mustard, chili powder and pepper.
5.Heat to a boil; reduce heat.
6.Simmer for 10 minutes.
7.Stir in beans and corn; cook for 5 minutes.
8.Serve topped with tortilla chips and shredded cheese if desired.
