Green chile chicken omelet by The Diner


1 whole Poblano Pepper, roasted and seeded, cut into 1/2 inch widestrips

3 eggs whipped

4 ounces of cooked chicken breast, diced

2 ounces of your favorite cheese

Place chicken in skillet heated with olive oil, butter,or margarine. 

When chicken is heated, add poblano peppers. 

After poblano peppers are heated, add your egg.

While egg is cooking, tilt skillet and allow uncooked egg on thetop to move under cooked egg.

When egg is 3/4 cooked, flip the omelet.

After flipping omelet, turn off heat and add your cheese.

Fold omelet onto plate and serve with your favorite side dish.
