Grant's Chicken Nachos
Sliced onion and bell pepper (1/2" slices sautéed)
Shredded pepper jack cheese
Pico de Gallo
In a deep skillet place about ½ inch of oil and set to medium high. Once the oil is hot, around 350 degrees, fry three corn tortillas. You will need to hold the tortillas down with a metal spatula as they will try to puff up. Once fried, about 1 minute on each side, place on a plate to drain the excess grease. Once the tortillas have cooled enough to the touch, spread sour cream over them and place your onions, peppers, grilled chicken slices, and pepper jack cheese. Place the covered nacho disks in a preheated 350 degree oven for about 5 minutes or until the cheese has melted. Cut the nacho disks into fourths and then plate around a bead of shredded lettuce topped with Pico de Gallo.
