Greek-Style Beef & Cheese Ravioli
Prep: 5 minutes Cook: 20 minutes Servings:  4

1-1/4 lbs. Lean ground beef
1 package (9 oz.) refrigerated cheese ravioli
2 cans (14-1/2 oz. Each) diced tomatoes with basil, garlic and oregano, undrained
2 cups lightly packed fresh baby spinach
1 cup pitted ripe olives
1/2-3/4 cup crumbled feta cheese 

1.Cook ravioli according to package directions; drain.
2.Brown ground beef in deep 12-inch nonstick skillet over medium heat 6 minutes or until beef is not pink, breaking into crumbles.
3.Stir in tomatoes; bring to a boil. Reduce heat; simmer 10 minutes.
4.Stir in ravioli; simmer 3 minutes.
5.Stir in 2 cups spinach and olives; cook just until spinach is wilted.
6.Sprinkle with cheese before serving. Garnish with spinach.

Asian Beef & Vegetable Stir-Fry  Prep: 15 minutes Cook: 10 minutes Servings:  6

1-1/4 lbs. Boneless beef top sirloin steak, cut 1-inch thick 4 cups assorted fresh vegetables, such as sugar snap peas, broccoli florets, bell pepper strips and shredded carrots
1 clove garlic, minced
1/2 cup prepared stir-fry sauce, preferably sesame-ginger flavor
1/8-1/4 tsp. Crushed red pepper
3 cups hot cooked rice 2 tbsp.
Unsalted dry-roasted peanuts (optional)

1.Cut beef steak lengthwise in half, then crosswise into 1/4-inch thick strips.
2.Combine vegetables and 3 tbsp. Water in large nonstick skillet.
3.Cover and cook over medium-high heat 4 minutes or until crisp-tender. Remove and drain.
4.Heat same pan over medium-high heat until hot.
5.Add half of beef and half of garlic; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. Remove. Repeat with remaining beef and garlic.
6.Return all beef and vegetables to pan.
7.Add stir-fry sauce and red pepper; heat through.
8.Spoon over rice. Sprinkle with peanuts, if desired.
