Grant's Grilled Rock Lobster
2 Rock (Spiny) Lobster tails cut in half
2 sticks of butter
1 tablespoon Halladay's Harvest Barn Garlic Chipotle Dip Mix (From Sweet Gourmet)
2 cups of small shrimp; peeled and deveined.
Take your lobster tails and coat with olive oil. Place on your grill and cook flesh side down for about 4 minutes. While your lobster tails are grilling, take you 2 sticks of butter, place in a mixing bowl, add 1 tablespoon of the garlic chipotle dip mix, and blend with a hand held mixer.
Once you have grilled the lobster tails for four minutes flesh side down turn and grill with the shell side down for another 4 minutes. While doing this spread your butter mix across the top of you lobster tails. This will cause your grill to flame up at times so watch your tails closely.
In a skillet either on the grill or inside on the stove sauté your shrimp in 2 table spoons of the butter mix. Once your lobster is done; plate and smoother with you sautéed shrimp.
