Grant's Crab Stuffed Mush Rooms:
1 pounds cooked crab meat
1 cup of mayonnaise (Try Duke's at Sweet Gourmet)
One green pepper
One red pepper
Old Bay Seasoning
One green onion
One Pack of Button Mushrooms
Shredded Parmesan Cheese
Take your Green and Red pepper and dice to ¼ "size. Sauté on med high heat with butter and a tea spoon of old bay seasoning for 8 minutes or until tender. Add dice green onion and cook and additional two minutes.
In a separate mixing bowl mix one cup of Mayonnaise, with the sautéed pepper mixture and a table spoon of Old Bay seasoning. Stir mixture until smooth. Then add crab meat. Mix thoroughly. Place in the refrigerator until needed. This is your crab stuffing for the mushrooms.
Wash the button mushrooms and snap off the caps. Place the caps in a skillet with butter and sauté for 6 to 8 minutes on med high heat. Place the sautéed caps, hollow side up, in a small baking pan. Fill the caps with the crab stuffing and then cover with shredded parmesan cheese. Place in a pre-heated 350° oven and cook for 15 to 20 minutes, until the cheese is golden brown.
