Thin mint cheesecake with Cooking Up a Storm's Grant

1 package of Thin Mint cookies

8 oz of Cream Cheese

8oz of Cool Whip

½ cup of sugar

¼ cup of melted butter

1 - 8" pie pan

Take your package of cookies and grind them in a food blender.  Take 1 ½ cups of your ground cookies and melted butter and mix until all cookie crumbs are moist.  Then place you crumb mixture into your pie pan and form the shape of your crust around the edges and bottom.  Once complete set aside in the refrigerator for 30 minutes to set.

In a large mixing bowl mix your sugar, cream cheese, and cool whip along with ½ cup of cookie crumbs until blended.  Place your cheesecake filling into your pie crust and then set back into the refrigerator for an additional 30 minutes to cool.  Cut into 8 slices and enjoy.
