
Ingredients:
2 lbs of chicken tenders
Olive oil
2 roma tomatoes diced ¼"
1 bunch of green onions diced ¼"
1 cup of mayonnaise
1 pound of cooked bacon (pre cooked weight) diced
8oz Shredded Monterey jack cheese
All purpose flower
Italian bread crumbs
In a large skillet cook the chicken tenders with 2 table spoons of olive oil. Once the chicken is cooked dice into fine pieces. In a large mixing bowl take your cooked chicken, diced tomatoes, diced green onions, diced bacon, shredded cheese, and mayonnaise and mix until smooth. Let the mixture cool in the refrigerator for 30 minutes then for the mixture into 1" diameter balls. Place each ball in flour, followed by egg wash, followed by the bread crumbs. Fry the balls in 350 degree vegetable oil for 3 to four minutes, or until golden brown.
Serve with ranch dressing or special dipping sauce and enjoy!
Dipping Sauce:
1 cup of Mayonnaise
½ Cup of Ketchup
1 tbs of Worcestershire sauce
1tsp of Garlic Salt
Black Pepper
Dipping sauce: Blend all ingredients except pepper until smooth. Then coat the surface with black pepper and then mix again.
