Janie's homemade frozen custard & butterscotch sauce

Homemade custard, butterscotch and pound cake.  If you haven't tried this combination, you need to!

Butterscotch Sauce

4 tbs. unsalted butter

1 c. Brown Sugar

3/4 c. Heavy Whipping cream

1/2 tsp. Salt

1 tbs Vanilla

First, melt butter over medium low heat in a heavy stainless saucepan. Just as butter is

completely melted add brown sugar and stir until sugar is completely wet.

Stir occasionally for 3-5 minutes until mixture goes from grainy sand to molten liquid in

look and texture. Add cream and stir thoroughly with a wooden spoon or wire whisk.

Turn heat up to medium and whisk occasionally for 10 minutes. Turn heat off, remove

pan from stove and allow mixture to rest for 3-5 minutes.

Vanilla Custard

1 c. half and half

2/3 c. Sugar

3 eggs, beaten

1 C. whipping cream

1 tsp Vanilla

¼ tsp salt

In a heavy saucepan, combine half and half, sugar and eggs. Cook over medium heat

until thickened (approximately 10 minutes). Remove from heat and allow to cool.

Pour mixture into a shallow pan and place in freezer until mixture turns slushy. Do not

allow to freeze hard. Whip cream. Add vanilla and salt to whipped cream.

Remove partially frozen slushy mixture from freezer and fold in whipped cream. Return

combined mixture to freezer and allow to freeze hard.

Take a slice of Janie's pound cake. Add a scoop of chilled custard. Top with homemade

butterscotch sauce and enjoy!!!
