Fresh Gulf Blackened Redfish

Fresh Gulf Redfish
Purchase fresh Redfish filets from the fish market no skin or bones.
Score fish & insert "quarter" slices of fresh Ginger into slits.
Cover fish with melted butter & sprinkle with seasoning mix.
Heat heavy iron skillet to "white hot".
Place fish on hot skillet & cook both sides until fish is firm feeling. Pan will smoke & flame, so be prepared!
Place on serving platter w/mixed field greens & wild brown rce.


7-9 oz. Fresh Redfish
1/4 Cup-Kosher Salt
1/4 Cup-Black Pepper
1 Tbs.-Cayenne Pepper
1 Tbs.-Dried Thyme

Mango/Mint Salsa
3-Mangos-peeled & diced
1-Red Onion-diced fine
2 Cups-Fresh Mint-chopped fine
1-Poblano Pepper-diced fine
1/4 Cup-Fresh lemon juice
1/4 Cup-Fresh juice +zest from 1 lime
*Adjust to taste with salt. pepper & cayenne

Mix together and refrigerate
Garnish with lime twist & mint leaf

1/4 Cup-Fresh Lemon Juice
1/4 Cup-Fresh Lime Juice
