The Diner's Grilled Tomatoes
Ingredients
1 ripe red tomato
Kosher Salt and Pepper Blend (3 parts Kosher Salt, 1 part coarse ground Black Pepper)
1 tblsp of butter or olive oil
Slice tomato into half inch slices
Heat oil or butter in skillet to smoke point
While oil heats, generously apply Salt and Pepper blend to both sides of tomato
Lay tomatoes in skillet when oil is hot
Cook approx. 2 minutes on each side. The tomato should begin to break down slightly. Do not overcook. You want them to maintain their character.
These go great with almost any meal. Use them to add spice and flavor to all dishes.
