Grant's Cheesy Breakfast Casserole:
1 cup sour cream
1 onion diced
1 green bell pepper diced
1 red bell pepper diced
2 cups hash browns, thawed
4 oz of sliced mushrooms
8 oz of diced bacon
8oz Cooked sausage
16 oz of shredded pepper jack cheese
In a large skillet cook your bacon until crisp. Remove bacon from the pan and discard all but 2 tablespoons of rendered bacon fat. Place you onion and peppers in the skillet and cook for 6 minutes over medium high heat. Add you mushrooms and hash browns and cook for an additional 4 minutes. Place the vegetable mixture in a greased 13X9 baking pan and ad sausage. In a large mixing bowl blend 12 eggs and 1 cup of sour cream until smooth. Pour this mixture in the baking pan. Sprinkle bacon bits over the top and then cover with cheese.
Bake in a pre heated 350 degree oven for 40 minutes or until the center is done.
