Creole Pasta Madeline

Lasagna noodles

2 cups Ricotta Cheese

2 cups frozen spinach or 6 cups fresh

¼ cup crab meat

6 sun dried tomatoes

¼ cup diced onions

1 tbs salt

1 ts black pepper

Cook your noodles in water with olive oil and a pinch of salt until al dente. Then place in an ice bath to stop the cooking process.

Make sure your spinach is dry before beginning the mixture

Place all ingredients in a mixing bowl and mix well. You may salt and pepper to taste.

Cut the lasagna noodle in half and place about 3 tablespoon in each half and roll it and place it in a dish.

Pour your favorite sauce (alfredo or Fat Catz creole cream sauce) over the roulades and bake on 350 for 10 Minutes or until hot all the way through.

Top with shrimp and crawfish tales and serve.
