2/3 CUP Oatmeal
12 oz Heavy cream
2 TBSP Honey
2 TBSP Drambuie (optional, can sub vanilla extract)
2 ½ cups Blueberries
Toast oatmeal in a dry skillet over medium high heat, constantly stirring until golden brown. Allow to cool. Whip heavy cream, honey, Drambuie or vanilla until medium peaks form. Fold in toasted oatmeal. To serve, 2 alternating layers of the blueberries and whipped cream mixture. Garnish with a couple of fresh berries and mint sprig.
