Cooking Up A Storm Blueberry BBQ sauce

3 pints             Fresh blueberries
1 ½ cups         Chopped onion
3 ea                 Garlic cloves, minced
½ cup              Brown sugar
½ cup              Honey
8 oz                 Ketchup
8 oz                 Red wine vinegar
8 oz                 Balsamic vinegar
3 TBSP           Dijon mustard
4 oz                 Molasses
2 oz                 Espresso
20 oz               Guinness beer (any dark beer or ale will do)
3-4 TBSP        Sriracha hot chili sauce

Add all ingredients into a 4 qrt sauce pot and cook over medium heat for approximately 2 hours stirring occasionally. Remove from heat and allow to cool for 10 minutes. Then put into a blender or food processor and puree sauce. Strain and adjust seasoning with salt and ground white pepper to taste.
