Southwest mac and cheese with Cooking Up A Storm's Grant

Grant's Southwest Mac and Cheese:

1 pound of ground beef

12 oz of large elbow pasta

½ green pepper diced

½ yellow onion diced

1 small can of diced green chilies

1 cup of salsa

1/3 cup of sour cream

16oz of pepper jack Velveeta

8oz of shredded mixed cheese

In a skillet brown your ground beef, drain, and add your onion and peppers.  Cook for an additional 5 minutes.  Next combine your salsa, sour cream, and green chilies along with your pepper jack Velveeta.  Mix until smooth.  Next add your cooked pasta and mix thoroughly.  Place your mixture in a casserole disk and cover with 8oz of shredded mixed cheese.  Bake in a 350 degree oven for 20 minutes and enjoy.
