Shrimp Scampi and Smoked Turkey Tasso Quiche

Ingredients:

          1 cup of raw 26/30 shrimp, cut into thirds
          ½ cup of Smoked Turkey Tasso
          ½ cup of Muenster cheese
          1 cup of liquid eggs (4 xl eggs)
          ½ cup of whole milk
          3 cups of fresh leaf spinach
          ¼ cup of diced onion
          ¼ cup of diced bell pepper
          ¼ cup of fresh cilantro
          ½ tsp of salt
          ½ tsp of black pepper
          1 tbsp of fresh chopped garlic
          1 tbsp of Tabasco Sauce
          1 nine inch pie shell

 

1.  Take pie shell and par cook for 15 minutes at 325 degrees in a conventional oven.
2.  Sautee onion, bell pepper, cilantro, garlic, salt, pepper,  spinach and turkey tasso until vegetables are tender and spinach has wilted.  Set aside to cool.
3.  While the mixture is cooling, crack eggs and mix them with the milk, Tabasco, shrimp, and cheese.
4.  Combine all ingredients and pour into par cooked pie shell.
5.  Cook for 30 to 40 minutes at 325 degrees in a conventional oven. 
6.  Allow to rest for 15 minutes, cut into eight pieces, and enjoy.
