Cooking Up A Storm's Grant's BBQ Chicken Quesadillas

Grant's BBQ Chicken Quesadillas:

 

2 pounds of Chicken Breast

BBQ Sauce

Shredded Mixed Cheese

1 Onion Diced ¼"

Olive Oil

1 Pack Large flour tortillas

Shredded Lettuce

Sour Cream

In a skillet place about 2 tablespoons of olive oil to coat the pan.  Sprinkle your favorite season in over the chicken breasts and sear in the pan over medium high heat, about 3 minutes on each side.  Take out of the pan and place you diced onions in the skillet.  Cook until translucent, about 5 minutes.  While the onions are cooking dice your chicken breast.  Now the breasts are probably not completely cooked and that is ok for now.  Place you diced chicken in with the onions and add your BBQ sauce, about 2 cups.  Simmer for about 20 minutes.

On a griddle take your large flour tortillas and heat on medium high.  Place about ¼ cup of cheese on each tortilla and heat until melted.  Once melted place enough chicken mixture to cover one tortilla and then place the second tortilla on top.  Cup and serve with lettuce and sour cream.

Well today was the perfect day to do it, because two East Texas teams paired up with local Dairy Queens to raise money for the Children's Miracle Network.  Serving guest at the drive-thru and enjoying some ice-cream themselves, John Tyler Lions and Tyler Lee Red Raiders football took part in Miracle Treat Day.  A five dollar donation was worth a small blizzard.
