Blackened chicken with cajun crawfish sauce from Cooking Up A Storms Grant

Grant's Blacken Chicken with Cajun Crawfish Sauce:

1 pound crawfish tails

1 onion diced ¼"

2 pounds of boneless skinless chicken breast

Blackening seasoning

8oz pepper jack cheese

1 pint of whipping cream

Olive Oil

Coat your chicken in olive oil and sprinkle with blackening seasoning generously.  In a skillet sear your chicken until done.

In a separate skillet take your onion with olive oil and cook on medium high heat until translucent, about 8 minutes.  Add crawfish tails to your onion and add 2 teaspoons of blackening seasoning.  Cook for an addition 5 minutes.  Add half of the heavy whipping cream (do not add the whole pint, once in you can't take it out).   Mix well and add the pepper jack cheese.  Once blended if the sauce is too thick for you, add a little whipping cream until you get the consistency you like.

Plate your blacken chicken and smother with the crawfish sauce.
