Dirty Rice / Rice Dressing

1 carton chicken livers (chopped)

1lb. chicken gizzards (boiled until tender and chopped)

1 cup chopped onions

1/2 cup chopped bell peppers

1/4 cup chopped celery

1/4 cup chopped green onions

2 tsp. minced garlic

3 cups cooked rice of choice

3/4 tps. salt

1 tsp. black pepper

1 tsp. paprika

1/8 tsp. cayenne

• Livers and gizzards can be replaced with a pound of browned ground beef

Spray a large skillet with enough Pam to cover bottom. Saute' vegetables until onions are translucent. Add chopped livers and gizzards and mix well. Add all spices and cook on medium heat until livers are no longer pink in color. Add cooked rice and mix well. Simmer an additional three (3) minutes. If you want mixture to be more moist add chicken broth until consistency is to your liking. Generally, none is needed. Sprinkle fresh or dried parsley flakes on top before serving

NOTE: This dish is a favorite and tradition in our family during the holidays. It may be served as a side dish or main entree (served with a green salad).
