
Grant Turkey Tacos:
2 pounds of cooked turkey (shredded)
2 onions (Diced)
3 cloves of garlic (minced)
2 cans of 8 oz rotel tomatoes
1 8oz can of tomato sauce
1 8oz can of chicken broth
2 table spoons of lime juice
2 table spoons of honey
2 tea spoons of cayenne pepper
2 tea spoons of Cumin
2 tea spoons of paprika
Flour tortillas
Sour cream
Pico de Gallo
Shredded pepper jack cheese
Shredded lettuce
In a skillet take your onions and garlic and cook on medium high heat with olive oil until the onions are translucent. Add your rotel, tomato sauce, and chicken broth, bring to a boil and then reduce heat and simmer on low for 30 minutes.
In a separate skillet take your shredded turkey meat and the cayenne pepper, cumin, and paprika. Cook over medium heat with olive oil for about five minutes. Add the turkey to your sauce and simmer for an additional 30 minutes. Finally add you lime juice and honey and mix thoroughly.
Severe on flour tortillas with sour cream, Pico de Gallo, shredded pepper jack cheese, and shredded lettuce.
