The Diner's King Ranch Chicken
Ingredients:
15 lbs. chicken, raw
5 cups diced onion
5 cups diced bell peppers
60 corn tortillas
2 1/2 #10 can whole tomatoes - crush by hand
2 1/2 lb. American cheese, shredded
1/8 cup chili powder
1/8 cup fresh chopped garlic
5 46oz can cream of chicken soup
2 1/2 cups fresh cilantro
Procedures:
Cook chicken - 165 degrees Combine cut up chicken, onion and green pepper. Cut tortillas into triangles then fry in fryer. Mix soup, chicken, spices, tortillas, tomatoes and cheese in a large mixing bowl. Place mixture in 8qt. containers. Date and store in cooler.
