Spicy white queso with Cooking Up a Storm's Grant

Grant's Spicy White Queso

Take 2 blocks of Velveeta pepper jack cheese.  Cut into cubes and place in a double boiler.  While the cheese is melting, brown 1 pound of ground beef.  Drain the excess grease and place meat into the melted cheese.  Mix in one can of rotel tomatoes.  Serve with Pico de Gallo and chives on top.  The recipe for my Pico de Gallo is here.
