Low-carb cheese sticks from Cooking Up a Storm's Grant

Block Cheese (Mozzarella or Pepper Jack)

Pork Rinds

Grated Parmesan Cheese

Breading for the cheese sticks:

Take a bag of pork rinds and grind them until the size of bread crumbs, this should give you around two cups.  Add a half cup of grated parmesan cheese and a quarter cup of oregano.

Next make an egg wash with a couple of eggs and water.  Take you block cheese and cut into sticks around ½ inch wide by 2 or 3 inches long.  Dip your cheese sticks in the egg wash, then the breading.  Dip the breaded cheese stick again in the egg wash and then coat a final time in the batter.  Place your breaded cheese sticks on a plate or cookie sheet and place in the freezer for at least 30 minutes.  Take your frozen cheese sticks and drop on hot 350 degree vegetable oil and cook for about 1 and an half minutes or until golden brown and floating.(If you cook too long the cheese will ooze out and you will be left with just the breading shell so watch closely)

Serve with a low carb marinara sauce or ranch dressing and enjoy.
