Build for the Chicken Balsamico

2oz. Olive Oil
4 Breaded Chicken Medallions
½ tsp. Salt, Garlic Salt, Pepper, Basil, Oregano, and Thyme Mixture
1/3 Cup Balsamic Vinegar
½ tsp. Chopped Fresh Garlic
1 Cup Chopped Spinach
1//2 Cup Diced Roma Tomatoes
5 oz. Angel Hair Pasta
¼ tsp. Parmesan Cheese

To a heated sauté pan add 1 oz. of olive oil ¼ tsp. spice mixture and chicken medallions. Sauté until both sides are well heated and a golden brown, then add balsamic vinegar. Allow vinegar to reduce and caramelize against the chicken breading. Set this mixture aside and in a new heated sauté pan combine 1 oz. olive oil ¼ tsp. spice mixture garlic, spinach, and tomatoes. Sauté until spinach is wilted and garlic browns. After cooking angel hair in boiling water, drain well and toss with vegetables. Place the pasta on the edge of your serving bowl and shingle the chicken across the front of it. Top with parmesan cheese.
