Carefully cut the onion to bloom by cutting off the onion top and then slicing the onion first in half, then quarters, then eights. Do not cut the onion all the way through. Leave attached at the bottom. Soak the onion in ice water for about 30 minutes. This helps open the onion.
In a large mixing bowl mix 2 pounds of flour with one cup of Cayenne Pepper and one cup of Paprika. Take your onion and cover with the batter mixture. Place back in the water and then once again cover with batter. Fry in 350 degree oil for 3 to 4 minutes, until golden brown. Cut out the center and place a small cup of dipping sauce.
½ cup ketchup
½ cup horseradish sauce
½ cup mayonnaise
Blend all the ingredients until smooth. Sprinkle the top with Paprika
