East Texas Eggs
Ingredients
1/2 lbs sausage
1/2 cups diced onions
3 cups potatoes, fresh chopped
1 tsp kosher salt
1 tsp pepper
1 cups shredded cheddar cheese
1/2 cups diced green bell pepper
6 large eggs, beaten
1/2 cups milk
Procedures
Brown potatoes.
Add onions and green pepper to potatoes.
Place potato mixture in mixing bowl
Cook sausage then dice. Add to mixing bowl
Whip eggs in separate bowl
Combine sausage mix, potatoes, eggs, milk, cheese and salt-pepper blend.
Mix well with whisk.
Spray pan.
Place egg mix in casserole dish.
Bake at 350 degrees for about 30 minutes.
If prepared the night before, cook for 45 minutes, due to chill from the refrigeration.
Yield: 1 ¼ quart (1 round foil pans)
Serves 6-8.
