Steak fajita omelet with Cooking Up a Storm's Grant

Fajita Flank Steak (See Recipe Online)

Pico de Gallo (See Recipe Online)

8 oz Sliced Mushrooms

½ Sliced Onion

½ Sliced Bell Pepper

4oz Pepper Jack Cheese

3 Eggs

In a skillet sauté Mushrooms, Onions, and Bell Peppers for about 6 minutes, until tender.  Then add your Pico de Gallo and continue sautéing for an additional 2 minutes.  While this is ongoing whip the 3 eggs in a mixing bowl with just a splash of water.  Place the egg mixture in the skillet and cook for about 4 minutes.  Once the outer edge is done, place the skillet under your oven's broiler for about 30 seconds.  This will cook the other side.  Take out of the oven and place sliced fajita steak and peeper jack cheese on top.  Place the skillet back under the broiler until the cheese melts.

Fold on a plate and enjoy!
