Cafe Frontera Sopas & Liquado

AUTHENTIC MEXICAN SOPES

You will need:

Maseca Corn Masa Flour

Water

Salt

Meat Filler of choice ( beef, chicken, chorizo, pork)

Refried Beans

Asadero Cheese ( or Cotija )

Crema Mexicana ( or sour cream)

Shredded Lettuce ( or Red Cabbage)

Tomato Chopped ( ¼ to ½ inch)

Avocado ( sliced )

Canola Oil ( or your favorite frying oil)

Cast Iron Skillet or Frying Pan

Mixing Bowl

Step 1 - Follow directions on the Maseca bag for the quanity desired and add water. You may add salt ( about ¼ tsp per cup of Maseca) but this is optional. Mix ingredients and kneed. No proofing time is required.

Step 2 - Pull off 2 oz of dough and roll into balls ( 2" diameter). This will make a 4" diameter Sope. However you may adjust this based on the desired size.

Step 3 - Form balls into a ½ " thick round pancake type tortilla by pressing and flipping in your hands.

Step 4 - Place the Sope on a griddle or frying pan ungreased on medium heat. Cook about 30 seconds per side or until you see brown toast marks on sope. Remove from heat.

Step 5 - While still warm pinch from the middle and work your way to the outer edge of the Sope to form a ¼ " rim. This forms the Sope into a small cup with a flat bottom.

Step 6 - Preheat about ½" of Canola Oil or your favorite frying oil in a frying pan to 350 degrees. You may use a deep fryer if you have one. Place the Sope "cup" into the pan and fry on each side approximately 30 seconds. The Sope should be crispy on the outside and soft on the inside. Remove and drain.

Step 7 - Assemble your Sope with first a portion of refried beans to the lip of the cup. Add your favorite meat filling which you have prepared separately, Cover with shredded lettuce, tomato, shredded Asadero Cheese ( or crumbled Cotija), add a slice of Avocado, and drizzle with the Crema Mexicana. There are many variations at this point and you can use your imagination to create your own Sope version. The key is the flavorful corn masa cup.

 

Liquado ( fruit smoothie )

You will need:

1 Cup fresh fruit cubed ¾" X ¾"

1 Cup Milk

2 TBSP Sugar

½ Cup ice

Blender

Add all ingedients to blender and blend on smoothie or equivalent speed until fruit and ice is well blended. Depending on Blender this should take 30 seconds. The sugar can be replaced with a sweetener of your choice. This yields appoximately a 16 oz Liquado.
