The Texas Beef Council's Traditional Rub for Roasts and Cranberry-Jalapeno Sauce
Traditional Rub Ingredients:
| 1/4 cup black pepper |
| 2 Tbsp. white pepper |
| 2 Tbsp. salt |
| 1-1/2 tsp. grounf thyme |
| 1-1/2 tsp. garlic powder |
| 1 tsp. onion powder |
Take all ingredients and combine them in a bowl. This recipe is approximately enough to cover a 5 lb. roast. Mix the ingredients well and rub evenly across the meat. Let stand in your refridgerator for 2hrs to overnight for maximum flavor.
Cranberry-Jalapeno Sauce ingredients:
| 1 cup fresh cranberries |
| juice of half an orange |
| 1/3 cup of sugar |
| 1 7 ounce jar of roasted red peppers diced |
| 1 small jalapeno, seeded and finely diced |
| 3 Tbsp. cilantro, chopped |
| zest of half a lime |
| zest of half an orange |
Blend the cranberries, juice and sugar in a food processor for 30-45 seconds. Transfer the mixture to a saute' pan and add the remaining ingredients. Cook on medium for approximately 10 minutes. Let the sauce stand for 30 minutes so that the flavors may blend. Last, warm the sauce over low heat before serving, making sure not to boil. Add salt to taste.
