4 Mahi Mahi Filets (about 8oz Each)
½ Diced Tomato
½ Yellow Onion, Diced
¼ Cup minced cilantro
8oz Jumbo Shrimp Peeled and Deveined
8oz Shredded Pepper Jack Cheese
¾ Cup Heavy Whipping Cream
In a large skillet, add you diced tomatoes and diced onions. Sauté with butter for about 8 minutes until onions are tender and onions are translucent. Once done, add the whipping cream and shredded pepper jack cheese and mix until smooth. In another skillet place your shrimp, sprinkle with blackening seasoning, and cook on medium heat with olive oil for about 6 minutes. Add the cooked shrimp to the cheese sauce and cook on low heat for about 5 minutes. While the sauce continues to cook, in a third skillet, take your Mahi Mahi filets and cover with blackening seasoning on each side. Over medium high heat with olive oil, place the filets down and cook for 3 minutes on each side. After six minutes, place the shrimp-cheese sauce over the fish and simmer for 10 minutes. Finally, sprinkle the minced cilantro over the mixture.
