Yield: 24 muffins
Ingredients:
1 cup pecans
1 cup peeled, grated raw carrot (about 2-3 peeled carrots)
1 cup grated raw zucchini
1 apple, grated
1 apple chopped into ½" square cubes
2 cups flour
1 cup local honey
¾ teaspoon baking soda
1 teaspoons baking powder
1/2 teaspoon salt
2 cups oats
3 fresh eggs
1/4 cup oil (use a good, healthy oil)
1 teaspoon pure vanilla
Directions:
- 1. Set oven to 325 degrees F
- 2. Mix together the flour, sugar, baking soda, baking powder, salt, cinnamon nuts and oats.
- 3. Add in the eggs, oil, and vanilla.
- 4. Add the carrots, zucchini and apple
- 5. Evenly divide the batter into the muffin cups.
- 6. Sprinkle the tops with oats
- 7. Bake for 20 - 25 minutes or until a toothpick inserted in the center comes out clean.
- 8. Remove from oven and let cool on a wire rack.
